Butterhead Lettuce

Butterhead is good source of carotenoid antioxidants, such as beta carotene, lutein, and zeaxanthin which protect our eyes from macular degeneration (or vision loss). It also contains higher amounts of non-heme iron than many other lettuces. 

What does that mean?  

We typically get heme iron which is a protein-bound form of iron from animals.  Non-heme is found in plants is not protein-bound and therefore is not as easily absorbed by our bodies.  

This is good so that we can eat large portions without worrying about taking in too much iron.  Plus, plant-based foods are less likely to cause heart related health issues.  Vitamin C helps increase our absorption of iron so throw a red pepper in with your butterhead to give that iron absorption a boost!

Butterhead lettuce adds great texture to a salad, works well on sandwiches and like Romaine makes a great wrap replacement.
